- Heat Oil
- Heat the olive oil in a large pot over medium heat.
- Sauté Aromatics
- Add the chopped onion, garlic, carrot, and celery to the pot and sauté until softened, about 5-7 minutes.
- Add Tomatoes
- Pour in the canned tomatoes with their juice. Break them up with a spoon.
- Add Broth and Seasonings
- Add the vegetable broth, salt, black pepper, and sugar. Stir to combine.
- Simmer
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
- Blend Soup
- Use an immersion blender to purée the soup until smooth. Alternatively, transfer to a blender in batches.
- Adjust Seasoning
- Taste the soup and adjust seasoning if necessary. Add chopped fresh basil.
- Serve
- Ladle the soup into bowls and garnish with extra basil if desired. Serve hot.
