Tomato Soup

  1. Heat Oil
    1. Heat the olive oil in a large pot over medium heat.
  2. Sauté Aromatics
    1. Add the chopped onion, garlic, carrot, and celery to the pot and sauté until softened, about 5-7 minutes.
  3. Add Tomatoes
    1. Pour in the canned tomatoes with their juice. Break them up with a spoon.
  4. Add Broth and Seasonings
    1. Add the vegetable broth, salt, black pepper, and sugar. Stir to combine.
  5. Simmer
    1. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  6. Blend Soup
    1. Use an immersion blender to purée the soup until smooth. Alternatively, transfer to a blender in batches.
  7. Adjust Seasoning
    1. Taste the soup and adjust seasoning if necessary. Add chopped fresh basil.
  8. Serve
    1. Ladle the soup into bowls and garnish with extra basil if desired. Serve hot.
